Tofu Bhurji Recipe
Ingredients:

200g firm tofu (pressed to remove excess water)

1 tbsp oil (vegetable oil or ghee)

1/2 tsp cumin seeds

1 onion, finely chopped

1 green chili, chopped (optional, for heat)

1 tomato, finely chopped
-
1/4 tsp turmeric powder
-
1/2 tsp red chili powder (adjust to taste)

1/2 tsp garam masala
-
1/4 tsp cumin powder
-
1/4 tsp coriander powder
-
Salt to taste

Fresh cilantro (coriander) for garnish

1/4 cup bell peppers, chopped (optional)

1/4 cup spinach, chopped (optional)

1 tbsp lemon juice (optional, for a fresh kick)
Instructions:

Prepare the Tofu:

Drain and press the tofu to remove excess water. Crumble the tofu into small, bite-sized pieces with your hands or a fork, resembling scrambled eggs.

Heat Oil & Temper Spices:

In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter for a few seconds.

Sauté Onions & Chilies:

Add chopped onions to the pan and sauté until golden brown. Add the green chilies (if using) and sauté for another minute.

Cook Tomatoes & Spices:

Add chopped tomatoes and cook until they soften. Then, add turmeric, red chili powder, garam masala, cumin powder, coriander powder, and salt. Stir well and cook for 1-2 minutes to bring out the spices' flavors.

Add Vegetables (Optional):

If you’re using bell peppers or spinach, add them to the pan now and cook for another 2-3 minutes until softened.

Add Crumbled Tofu:

Stir in the crumbled tofu and mix it well with the spices and vegetables. Cook for 5-7 minutes, stirring occasionally, so the tofu absorbs the flavors and becomes slightly golden.

Finish with Lemon Juice:

Optional: Add a squeeze of lemon juice for an extra zing and garnish with fresh cilantro.
