Tofu Bhurji Recipe


Ingredients:

  • 200g firm tofu (pressed to remove excess water)

  • 1 tbsp oil (vegetable oil or ghee)

  • 1/2 tsp cumin seeds

  • 1 onion, finely chopped

  • 1 green chili, chopped (optional, for heat)

  • 1 tomato, finely chopped

  • 1/4 tsp turmeric powder

  • 1/2 tsp red chili powder (adjust to taste)

  • 1/2 tsp garam masala

  • 1/4 tsp cumin powder

  • 1/4 tsp coriander powder

  • Salt to taste

  • Fresh cilantro (coriander) for garnish

  • 1/4 cup bell peppers, chopped (optional)

  • 1/4 cup spinach, chopped (optional)

  • 1 tbsp lemon juice (optional, for a fresh kick)

Instructions:

  1. Prepare the Tofu:

    • Drain and press the tofu to remove excess water. Crumble the tofu into small, bite-sized pieces with your hands or a fork, resembling scrambled eggs.

  2. Heat Oil & Temper Spices:

    • In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter for a few seconds.

  3. Sauté Onions & Chilies:

    • Add chopped onions to the pan and sauté until golden brown. Add the green chilies (if using) and sauté for another minute.

  4. Cook Tomatoes & Spices:

    • Add chopped tomatoes and cook until they soften. Then, add turmeric, red chili powder, garam masala, cumin powder, coriander powder, and salt. Stir well and cook for 1-2 minutes to bring out the spices' flavors.

  5. Add Vegetables (Optional):

    • If you’re using bell peppers or spinach, add them to the pan now and cook for another 2-3 minutes until softened.

  6. Add Crumbled Tofu:

    • Stir in the crumbled tofu and mix it well with the spices and vegetables. Cook for 5-7 minutes, stirring occasionally, so the tofu absorbs the flavors and becomes slightly golden.

  7. Finish with Lemon Juice:

    • Optional: Add a squeeze of lemon juice for an extra zing and garnish with fresh cilantro.

  8. Serve:

    • Serve your Tofu Bhurji hot with toasted bread, roti, paratha, or even as a filling for wraps.
